Beef

All our beef is carefully sourced, with preference for UK farms whenever possible. In cases where non-UK origins are necessary, we purchase directly from the source to maintain the highest quality and competitive pricing. This direct approach also allows us to ensure that the chill chain remains optimal throughout transportation, guaranteeing that our beef arrives in the best possible condition.

Pork

Our pork is selected with care to meet a variety of culinary preferences. Whether you’re looking for pork with a heavier fat cover for crispy crackling or leaner cuts for dishes like pressed bellies, we have you covered. To enhance the natural flavors, all our pork is hung for up to five days, allowing it to dry and mature, ensuring a rich and authentic taste in every cut.

Poultry

We predominantly source our poultry from UK farms, with our dry-plucked chickens typically carrying the Red Tractor certification, with many cuts delivered daily. Our turkeys are locally sourced from right here in Kent.

We also partner directly with suppliers in France to offer a wider variety of options including Red Tractor-certified, halal, and free-range products, ensuring we meet the diverse needs of our clients.

Lamb

At Block and Cleaver, we are proud to source all our lamb locally within Kent, ensuring the freshest and highest quality produce. We also have the capability to source lamb from the Brecon Beacons in Wales and Sussex, allowing us to offer a variety of premium options. All of our lamb is carefully hung and aged to enhance its flavor profile and tenderness. Each cut is then hand-selected to ensure perfect quality, uniformity, and consistency, delivered on time, every time.

Charcuterie

Our Kent-based cooked meats and charcuterie suppliers are the perfect partners for Block and Cleaver, providing us with the highest quality products available in the local area. These bespoke offerings complement our fresh meat production perfectly, adding a wide array of delicious options. The selection is extensive, and the quality is truly mouth-watering, ensuring that we can meet the diverse needs of our customers with excellence.

Buying with Confidence

All of our produce is fully traceable, thanks to our bespoke, self-developed computer automated barcode traceability system, known as “The Meat Tracker.”

Each product is assigned a unique code that allows us to monitor its journey from the moment it enters our facility, throughout production, and until it is dispatched from our cutting plant, “UK 2166 EC.” This barcode system holds the complete history of the product, from the location where it was slaughtered to the point it enters our plant, ensuring full transparency and traceability at every stage.
